Mix warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
In a large bowl, combine flour and salt. Add yeast mixture and olive oil. Knead for 8-10 minutes until smooth and elastic.
Place dough in an oiled bowl, cover, and let it rise in a warm place for 1-1.5 hours until doubled.
Preheat oven to the highest temperature (250°C/480°F or higher). Place pizza stone or baking sheet inside to heat.
Punch down dough and divide into 4 portions. Roll each into a thin circle.
Mix tomato sauce with minced garlic and oregano.
Spread sauce on dough, leaving a border for the crust. Top with torn mozzarella pieces.
Carefully transfer to hot pizza stone/sheet. Bake for 10-12 minutes until crust is golden and cheese is bubbly.
Remove from oven, immediately top with fresh basil leaves. Drizzle with olive oil and sprinkle red chili flakes if desired.
💡 Chef's Notes
A pizza stone gives the best results, but a preheated baking sheet works too. Don't overload with toppings - less is more for authentic Italian pizza. Fresh mozzarella makes a huge difference!
