Preheat oven to 180°C (350°F). Grease and flour two 9-inch round cake pans.
In a large bowl, sift together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
Add eggs, milk, oil, and vanilla extract. Beat on medium speed for 2 minutes.
Carefully stir in boiling water (batter will be thin - this is normal).
Pour batter evenly into prepared pans. Bake for 30-35 minutes until a toothpick inserted in the center comes out clean.
Cool in pans for 10 minutes, then remove and cool completely on wire racks.
For ganache: Heat cream until just boiling. Pour over chopped chocolate. Let sit for 2 minutes, then stir until smooth and glossy.
Let ganache cool to spreading consistency (about 30 minutes).
Place one cake layer on a plate. Spread ganache on top. Add second layer and cover entire cake with remaining ganache.
Refrigerate for 30 minutes before serving for cleaner slices.
💡 Chef's Notes
The boiling water makes the cake incredibly moist - don't skip it! Make sure cakes are completely cool before frosting. You can make this a day ahead - it actually tastes better the next day!
