Authentic Chicken Biriyani

Wash and soak basmati rice for 30 minutes. Drain and set aside.
Marinate chicken with yogurt, ginger-garlic paste, turmeric, red chili powder, and salt. Let it rest for 20 minutes.
Heat ghee in a heavy-bottomed pot. Add whole spices and let them crackle.
Add sliced onions and fry until golden brown. Remove half for garnishing later.
Add tomatoes, green chilies, mint, and coriander. Cook until tomatoes soften.
Add marinated chicken and biriyani masala. Cook on medium heat until chicken is 70% done.
In another pot, boil water with salt and whole spices. Add soaked rice and cook until 70% done. Drain.
Layer the partially cooked rice over the chicken. Sprinkle fried onions, saffron milk, mint, and coriander on top.
Cover tightly with aluminum foil and a lid. Cook on low heat (dum) for 20-25 minutes.
Turn off heat and let it rest for 5 minutes before opening. Mix gently and serve hot with raita.
💡 Chef's Notes
The key to perfect biriyani is the dum (slow cooking). Make sure the pot is sealed properly to trap the steam. Use good quality basmati rice for best results.
